Honey Cake


Ingredients:
  • Curd – ½ Cup
  • Oil - ¼ Cup
  • All-purpose flour – 1 ¼ cup
  • Powdered sugar – ¾ Cup
  • Baking powder – 1 Tsp
  • Baking Soda – ½ Tsp
  • Milk -1/4 Cup
  • Sugar – 2 Tbsp
  • Water – ¼ Cup
  • Honey – ¼ Cup + 1 Tsp
  • Strawberry Jam – ¼ Cup
  • Desiccated Coconut for garnishing
Method:
  • Preheat the oven for 180 degree celcius.
  • In a large mixing bowl, add oil and curd and mix well.
  • Sieve the flour, powdered sugar, baking soda and baking powder and add this to the curd oil mixture.
  • Combine well all the ingredients. • Further add the milk and mix well.
  • Pour in to the butter greased mould.
  • Bake for 15 to 20 min.
  • Let it cool for some time.
  • In a separate pan, heat 2 tbsp sugar, water and mix well.
  • Once the sugar is completely dissolved, add ¼ cup honey and mix will.
  • Now prick the whole cake evenly from the top with fork and spread the prepared honey syrup so that it gets absorbed by the cake through the pores.
  • In other pan, heat strawberry jam and 1 tsp honey. Mix well. (don’t over heat)
  • Spread this mixture over the cake. 
  • Garnish the cake with desiccated coconut.
