Aloo Paratha
Ingredients:
For the Dough:
- Wheat Flour - 2 Cup
- Oil - 2 Tbsp
- Salt - As per taste
- Water - 1 Cup
For the Stuffing:
- Boiled and mashed potato - 2 medium size
- Finely chopped green chili - 1 to 2
- Coriander powder - 1/2 tsp
- Cumin Powder - 1/4 tsp
- Red chili powder - 1/4 Tsp
- Turmeric Powder - 1/4 Tsp
- Dry Mango Powder - 1/4 Tsp
- Ajwain - 1/4 Tsp
- Chopped Ginger - 1 Tsp
- Chopped Coriander Leaves -2 Tbsp
- Salt - as per taste
- Oil - for greasing parathas
- Wheat flour - for dusting
Method:
- Knead the dough using flour, salt, oil and water.
- In a large mixing bowl take boiled and mashed potato and all other ingredients except last 2 ingredients
- Mix well making sure all the spices are combined well.
- Tale a ball sized wheat dough and dust with some wheat flour.
- Roll it in a circle of about 4 to 5 inches in diameter.
- Place the stuffing in the center and again make a ball, then roll the paratha, slightly thick.
- Fry the paratha to golden brown adding oil/ghee.
- Serve the hot aloo paratha with butter, raita or pickle.
