Mangalorean Cuisine that amazes!

Indian Cuisine is known to be tasty as well as stylish. The vast variety of regional cuisines provide an endless journey in food. From the cuisine in the north to that of the South, the natural taste of the dishes is unparalleled. In Karnataka, Mangalorean Cuisine is known for its wide range of spices, masalas as well as the overall taste of the delicacies. Proud of my Mangalorean roots, I have been accustomed to the taste ever since. From Chicken Sukha(A tradition non-vegetarian dish) to Golibaje(an evening snack), the vast variety of tastes is enough to keep you satisfied and happy.

One of the most defining characteristics of Mangalorean Cooking is its spices. Throughout the centuries, the legacies of preparing such spices have been passed down from one generation to another. The natural feel and taste of these spices give a different feel to the wide range of delicacies that are prepared in that region. These spices are generally ground together using natural stones to give a fine texture.

Another Defining characteristic of Mangalorean Cooking is its versatile use of coconut. Most of the traditional Mangalorean dishes are known for their unique utilization of coconut as a means to enhance the taste of the food. One major reason for the vast utilization of coconut in dishes is its availability in South India. Coconut trees can be seen on every corner and every block. Many varieties of curries, chutney, as well as other dishes, are made using coconut.

Moreover, Mangalorean Cuisine is known for its use of fish in various delicacies. As Mangalore is a coastal city, fish is one of the most readily available food items. It is used in various forms – some are used in making fish curry whereas others are fried. The fishes are also cooked in various techniques to give out different tastes and feelings to the food.

Furthermore, Mangalorean cooking has its unique defining characteristic that is the curry leaf. 90% of the dishes from Southern India use these curry leaves as a way to give it a unique
look.

Mangalorean Cooking is known to be one of the best cooking styles in Southern India. As a person who has lived the majority of her life in a town of Mangalore, the style of cooking there has been passed down to me is one that I will try to better as well as spread far and wide.
