Seekh Kabab


Ingredients:
  • Beef Mince – ½ kg
  • Garlic - 14 to 16 cloves
  • Onion – 1 medium
  • Ginger – 2 “piece
  • Green Chili – 2
  • Mint leaves – 2 Tbsp
  • Coriander Leaves – 2 Tbsp
  • Baking Soda – ½ Tsp
  • Garam Masala – 1 Tsp
  • Coriander powder – 1Tbsp
  • Red Chili Flakes – 1 Tbsp
  • Red Chili Powder – 1Tsp
  • Cumin Powder – 1 Tbsp
  • Melted Ghee – 2 Tbsp
  • Salt as per taste

Method:
  • Add all these ingredients except ghee, into a food processor.
  • Chop until all are well combined
  • Transfer the mince mixture into a bowl.
  • Add ghee and knead the mixture for 4 to 5 minutes.
  • Cover and refrigerate for an hour.
  • Take a big ball of the mince mixture and pierce it through the skewer, spread the mixture on the skewer with your hands.
  • Similarly, prepare all the kebabs.
  • Heal 2 tbsp of oil in a pan.
  • Fry on medium flame from all sides until done. (6 to 8 minutes).
  • Serve with green chutney/curd raita.
  • Clean and wash the beef pieces, and drain the excess water.
  • Marinate the beef with a little salt, turmeric, and lemon juice and keep aside for at least 15 min.
  • Dry roast red chilies. Coriander, cumin, mustard, black pepper, star anise, clove, fennel seeds, cinnamon stick cardamom, maze.
  • Transfer it to the blender, add tamarind and little water and grind it to a smooth paste.
  • Take a pressure cooker, add marinated beef, 1 tbsp ghee and mind cook till 3 to 4 whistles on medium heat. (if required add ¼ glass
  • of water.)
  • Heat a heavy-bottomed pan, add the remaining ghee. When it is hot add curry leaves.
  • Add chopped ginger, garlic and green chilies.
  • Fry for a minute, then add chopped onions, fry till onion becomes golden brown.
  • Now add the masala paste and fry till you get a nice aroma.
  • Add the cooked beef and mix well. (don’t add more beef stock)
  • Stir and fry on medium fire for at least 10 min or till water evaporates.
  • Serve with Rice / Roti/ Naan.
