Seekh Kabab
Ingredients:
- Beef Mince – ½ kg
- Garlic - 14 to 16 cloves
- Onion – 1 medium
- Ginger – 2 “piece
- Green Chili – 2
- Mint leaves – 2 Tbsp
- Coriander Leaves – 2 Tbsp
- Baking Soda – ½ Tsp
- Garam Masala – 1 Tsp
- Coriander powder – 1Tbsp
- Red Chili Flakes – 1 Tbsp
- Red Chili Powder – 1Tsp
- Cumin Powder – 1 Tbsp
- Melted Ghee – 2 Tbsp
- Salt as per taste
Method:
- Add all these ingredients except ghee, into a food processor.
- Chop until all are well combined
- Transfer the mince mixture into a bowl.
- Add ghee and knead the mixture for 4 to 5 minutes.
- Cover and refrigerate for an hour.
- Take a big ball of the mince mixture and pierce it through the skewer, spread the mixture on the skewer with your hands.
- Similarly, prepare all the kebabs.
- Heal 2 tbsp of oil in a pan.
- Fry on medium flame from all sides until done. (6 to 8 minutes).
- Serve with green chutney/curd raita.
- Clean and wash the beef pieces, and drain the excess water.
- Marinate the beef with a little salt, turmeric, and lemon juice and keep aside for at least 15 min.
- Dry roast red chilies. Coriander, cumin, mustard, black pepper, star anise, clove, fennel seeds, cinnamon stick cardamom, maze.
- Transfer it to the blender, add tamarind and little water and grind it to a smooth paste.
- Take a pressure cooker, add marinated beef, 1 tbsp ghee and mind cook till 3 to 4 whistles on medium heat. (if required add ¼ glass
- of water.)
- Heat a heavy-bottomed pan, add the remaining ghee. When it is hot add curry leaves.
- Add chopped ginger, garlic and green chilies.
- Fry for a minute, then add chopped onions, fry till onion becomes golden brown.
- Now add the masala paste and fry till you get a nice aroma.
- Add the cooked beef and mix well. (don’t add more beef stock)
- Stir and fry on medium fire for at least 10 min or till water evaporates.
- Serve with Rice / Roti/ Naan.
